Comforting Potato and Leek Soup

This past weekend I had a craving for soup. I’m one of those people who can eat soup any time of year – winter, spring, summer, autumn – it doesn’t matter the season. My family is not like that, and my hubby prefers having soup when it’s a bit colder out.

As my luck would have it the Saturday was cold; and perfect soup weather. So I decided to attempt my first Potato and Leek soup. I know this is a basic soup and so easy to make; and I can’t believe I never tried it before!!

So now I will share my recipe (since I adjusted it slightly according to my taste) with you!

Divine Potato and Leek Soup:


  • 5 large potatoes
  • 5 large leeks
  • ½ white onion
  • Few sprigs of spring onion (optional)
  • 1l chicken stock
  • 1 cup cream
  • Dash of oil


  1. Peel, cut and wash your potatoes and onion.
  2. Cut and wash your leeks and spring onion. Make sure to wash the leeks well, as grit tends to get in everywhere!
  3. Heat a dash of oil in your pot.
  4. Once the oil is warm, add your onion and leeks and allow them to sweat – not burn or discolor.
  5. As soon as the onions start to turn translucent add the potato and spring onions. And mix thoroughly.
  6. Pour in the stock. It should be enough to cover all the vegetables and potatoes, if not just add some water.
  7. Bring to a simmer, and allow to simmer at least 30 min, or until the potatoes are soft. You can let it simmer for longer if time allows.
  8. Blend until smooth using a stick blender, or…
  9. Take the pot off the heat and allow to cool completely.
  10. Blend the soup using a stand blender by adding to the blender (might need to do two sessions) and pulsing a few times before blending on full speed.
  11. Pour back into the pot and start re-heating.
  12. Finally add the cup of cream and season to taste with salt and pepper.
  13. Serve warm, and savor the comfort!

5 nice serving suggestions:

  • Top your soup with some freshly made croutons.
  • Top with some freshly grated cheese; Cheddar works quite well, but Gouda is also nice.
  • Sprinkle some chopped spring onion over the top for a fresh twist.
  • Serve in a bread bowl.
  • Serve in a bowl with a crisp and cheesy pastry lid.
